Rachael Ray’s Eggplant Stacks Prove There Is No Such Thing as Too Much Flavor

Step 1: Slice eggplant and drain excess liquid with salt and towels.

Step 2: Preheat oven to 450˚F.

Step 3: Line baking sheets with parchment paper.

Step 4: Place eggplant on sheets and spray with oil. Season with fennel, red pepper, and oregano.

Step 5: Roast for 20 minutes.

Step 6: Add oil to a pan with onions and a bay leaf.

Step 7: Add garlic, a cinnamon stick, black pepper, water, and tomatoes.

Step 8: Remove bay leaf and cinnamon before roasting ham in oven.

Step 9: Bake layers of sauce, ham, eggplant and cheese.
