Tangy Olive Salsa

A great salsa to go with your low-carb BBQ

1 cup tomatoes peeled, diced
1/3 cup fresh parsley
1/4 cup yellow bell pepper, chopped
2 tablespoons Greek olives, pitted
2 tablespoons fresh lime juice
1-1/2 tablespoons capers, drained
1-1/2 tablespoons olive oil
1-1/2 teaspoon fresh basil, chopped
1 teaspoon balsamic vinegar
Dash cayenne pepper
Dash black pepper

1. Mix ingredients.

2. Put in refrigerator and cover for one hour to enhance flavor.

3. Makes eight servings.

Per serving: 2g carbohydrates; 3g total fat; 37 calories
