Green Beans Almondine
1 pound green beans, trimmed
6 slices bacon
2 cloves minced garlic
1 medium red onion, sliced
1/2 cup sliced almonds
1 teaspoon salt
1/2 teaspoon pepper
Cut green beans in half, and steam until tender crisp. Fry bacon in a large skillet. Drain away most of the fat, reserving about 1 Tbsp to saute the garlic and onion. When the garlic and onion are nearly translucent, add the almonds cooked green beans and toss to coat. Crumble the cooked bacon and return it to the skillet and mix with the beans. Season with salt and pepper.
