Spaghetti squash is a winter squash, and in many parts of the country, now’s about the time to harvest. When harvesting or picking a squash at market, look for hard fruit that feels heavy for its size, with a pale even color. An average four-pound spaghetti squash will yield about five cups of pasta-like flesh.

There are plenty of ways to cook spaghetti squash, including baking, boiling and even microwaving. When the squash is cooked, scoop out the flesh, with has a surprisingly noodle-y consistency. The squash flavor is very mild, so it’s a perfect substitution for all your carb-laden pasta dishes!
