Banana walnut crepe

Raspberry Almond Fool

Serves 4

  • 10-ounces frozen raspberries
  • 1/2 cup confectioners’ sugar
  • 1 1/4 cup nonfat yogurt (use a good quality yogurt, it’s worth it)
  • 1/2 teaspoon almond extract
  • 2 egg whites
  • 2 tablespoons sliced almonds

  1. Put the raspberries and confectioners’ sugar in a food processor or blender and blend until smooth, about 30 seconds.
  2. In a medium mixing bowl, stir the raspberry mixture, yogurt, and almond extract.
  3. In a separate bowl, whisk egg whites until they form stiff peaks (using a stand mixer or handheld speeds this process up).
  4. Fold egg whites into the raspberry/yogurt mixture; stir until smooth (a wire whisk can help).
  5. Spoon into serving glasses and chill for at least 1 hour. Sprinkle with sliced almonds just before serving.
