Lemon poppy seed cookies

  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 tablespoon poppy seeds
  • 8 tablespoons unsalted butter, at room temperature
  • 2/3 cup coconut palm sugar
  • 2 tablespoons lemon zest
  • 1 large egg


  1. Heat the oven to 350 degrees F.
  2. Line 2 baking sheets with parchment paper.
  3. In a small bowl, whisk together the flour, baking powder, salt and poppy seeds. Set aside.
  4. In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter and sugar on medium-high speed until light and fluffy, about 2 minutes.
  5. Mix in the lemon zest, vanilla and egg until blended.
  6. Mix in the dry ingredients on low speed, just until incorporated.
  7. Drop balls of dough onto the prepared baking sheets about 2 inches apart.
  8. Bake for 9 to 11 minutes or until the cookies are set and just beginning to brown at the edges (do not let the tops brown).
