Who doesn’t love pickles? I find I always have at least one (OK, maybe more like three…) jar in my house. Pickles make an excellent healthy snack, but I always get just a little bit sad when I throw away a huge jar of leftover pickle juice.
And then I discovered the magic of cooking with pickle juice! These fantastic recipes, from the pickle juice marinade to the bloody mary to how you can even use it to clean your kitchen, are just what we pickle-loving friends need. Dig in!
1. Pickle juice marinade recipe
Total time: 1-1/2 hours prep and cooking time
- 1/2 cup pickle juice
- 2 garlic cloves, minced
- 1/2 cup soy sauce
- 1 teaspoon pepper
- 1 tablespoon lime juice
- In a bag, combine all the ingredients.
- Add the chicken to the bag, and let it sit overnight.
- Bake the chicken until it reaches an internal temperature of 180 degrees F.
