Sweet Potato Chowder

Serves 4

Ingredients:

  • 1 pound sweet potatoes, cut into 1/2-inch cubes
  • t

  • 3 cups vegetable broth
  • t

  • 1 onion, chopped
  • t

  • 1 tablespoons minced fresh sage
  • t

  • 1 teaspoon minced fresh rosemary
  • t

  • 1/2 cup coconut milk
  • t

  • Salt and freshly ground black pepper to taste
  • t

  • Finely chopped cashews

Directions:

  1. In a large saucepan over medium-high heat, stir together potatoes, broth, onion, sage, and rosemary.
    Bring to a boil, lower heat, loosely cover and simmer for 15 minutes or until potatoes are tender.

  3. Stir in coconut milk and season with salt and pepper. Bring to a simmer, stirring occasionally.

  5. When heated through, serve hot, sprinkled with cashews.
