Super Easy Tofu Chili

No need for a long simmer with this fast and easy tofu chili recipe. High in protein and fiber, this is a hearty vegan dinner recipe you'll want to serve all fall and winter long.

Super Easy Tofu Chili

Serves 6

Ingredients:

    • 2 tablespoons olive oil
    • 1 onion, finely chopped
    • 1 green bell pepper, finely chopped
    • 1 (16-ounce) block of firm tofu, pressed, drained, cut into cubes
    • 1 (15-ounce) can chili beans
    • 1 (15-ounce) can fire-roasted tomatoes
    • 1 teaspoon ground coriander
    • 1 teaspoon ground cumin
    • 1 teaspoon chili powder or more to taste
    • 1-1/2 cups corn kernels


Directions:

    1. Heat oil in a medium soup pot over medium heat. Cook onion and bell pepper, stirring often, until they are just tender.
    2. Add tofu and cook, turning often, until tofu is lightly browned.
    3. Stir in beans, tomatoes, and spices. Bring to a simmer and cook, stirring occasionally, for about 5 minutes.
    4. Stir in corn and continue to simmer for 5 minutes more. Serve hot.
