Sun-Dried Tomato and Artichoke Tofu

- 1 (12-ounce) piece of tofu, pressed, drained
- 1/2 cup sun-dried tomatoes packed in olive oil, drained
- 3/4 cup marinated artichoke hearts
- 3 tablespoons finely chopped fresh parsley

Directions:

- Cut tofu into cubes and set aside.
- In a medium skillet over medium-high heat, add tomatoes and artichoke hearts. Cook, stirring often, for 3 minutes.
- Add tofu and cook, stirring often, until tofu is lightly browned.
- Sprinkle with parsley and serve.
