Sun-Dried Tomato and Artichoke Tofu

Sun-dried tomatoes packed in olive oil are a staple in my kitchen, adding flavor, color and texture to many of my daily meals. Combining sun-dried tomatoes with marinated artichokes can give rather bland-tasting tofu a delicious update.

Sun-dried tomatoes packed in olive oil are a staple in my kitchen, adding flavor, color and texture to many of my daily meals. Combining sun-dried tomatoes with marinated artichokes can give rather bland-tasting tofu a delicious update.

Sun-Dried Tomato and Artichoke Tofu

Serves 2

Ingredients:

  • 1 (12-ounce) piece of tofu, pressed, drained

  • 1/2 cup sun-dried tomatoes packed in olive oil, drained

  • 3/4 cup marinated artichoke hearts

  • 3 tablespoons finely chopped fresh parsley


Directions:

  1. Cut tofu into cubes and set aside.

  2. In a medium skillet over medium-high heat, add tomatoes and artichoke hearts. Cook, stirring often, for 3 minutes.

  3. Add tofu and cook, stirring often, until tofu is lightly browned.

  4. Sprinkle with parsley and serve.
