Mustard Dill Red Potato Salad

Serves 6

Ingredients:

  • 4 large red potatoes
  • t

  • 2 celery stalks, diced
  • t

  • 2 green onions, sliced (green and white parts)
  • t

  • 1/4 cup chopped fresh dill
  • t

  • 2 tablespoons vegan mayo
  • t

  • 1 tablespoon Dijon mustard or more to taste
  • t

  • 3 tablespoons extra virgin olive oil
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. Cut potatoes into bite-sized cubes and place in a large pot of boiling salted water. Cook until just fork tender.

  3. Rinse under cold water and allow to cool.
  4. t

  5. Meanwhile, in a large bowl, combine the remaining ingredients.

  7. Add potatoes to the bowl and toss to combine.
  8. t

  9. Serve immediately or refrigerate overnight, tossing again before serving.
