My latest fun food find is Annie Chun’s Maifun Brown Rice Noodles. Directed by my 4-year old son (yes, he’s a great chef in the making), we tossed together this easy vegan dinner in less than 10 minutes!

Asian Brown Rice Noodles with Vegetables

  1. Cook brown rice noodles according to package directions. Drain and set aside.
  2. t

  3. Meanwhile, heat oil in a large skillet over medium heat. Add vegetables and cook, stirring often, until tender and lightly browned.
  4. t

  5. Add noodles and 3/4 cup dressing and toss ingredients to coat. Remove from heat and add more dressing if desired.
  6. t

  7. Divide noodle mixture among 6 plates and serve immediately with extra dressing on the side.
