Vegan Sloppy Joes

Serves 4

Ingredients:

    t

  • 1 (16-ounce) block of firm tofu, pressed, drained
  • t

  • 2 tablespoons olive oil
  • t

  • 1 small onion, finely chopped
  • t

  • 1/2 red bell pepper, finely chopped
  • t

  • 2 garlic cloves, minced
  • t

  • 1-1/2 cups tomato puree
  • t

  • 2 tablespoons tomato paste
  • t

  • 2 tablespoons molasses
  • t

  • 1 teaspoon ground coriander
  • t

  • Pinch of cayenne
  • t

  • 2 tablespoons minced fresh parsley
  • t

  • 8 whole grain buns, split, toasted

Directions:

    t

  1. Crumble tofu into a medium bowl and set aside.
  2. t

  3. In a large skillet over medium heat, heat oil and cook onion and bell pepper, stirring often, for 4 to 5  minutes or until vegetables are soft.
  4. t

  5. Add garlic and cook, stirring, for 1 minute. Stir in tofu and cook, stirring occasionally, for 3 minutes.
  6. t

  7. Stir in tomato puree, tomato paste, molasses, coriander, cayenne, and parsley. Bring to a simmer and cook, stirring occasionally, for 10 minutes.
  8. t

  9. Fill buns with tofu mixture and serve.
