Spiced Iced Coconut Milk

Serves 8

Ingredients:

  • 1 (15-ounce) can coconut milk, shaken before opening
  • t

  • 32 ounces vanilla almond milk
  • t

  • 1 tablespoon grated fresh ginger
  • t

  • 3 cinnamon sticks
  • t

  • 3 pieces star anise
  • t

  • Large pieces of zest from 1 orange
  • t

  • Pinch of cayenne
  • t

  • Pinch of freshly grated nutmeg
  • t

  • Skewers of pineapple chunks

Directions:

  1. Place milks, ginger, cinnamon, star anise, and orange zest in a large pot over medium heat.

  3. Whisk until mixture comes to a simmer. Reduce heat to low and continue to simmer, whisking occasionally, for 15 minutes.

  5. Remove from heat and let cool completely.
  6. t

  7. Strain through a fine mesh sieve into a pitcher. Stir in cayenne and nutmeg.
  8. t

  9. Refrigerate until chilled. Serve over ice, garnished with skewers of pineapple.
