Avocado Tomato Baguette Sandwiches

Serves 4

Ingredients:

  • 2 (6-ounce) Italian or French baguettes
  • t

  • Vegan mayonnaise to taste
  • t

  • 3 tablespoons minced onion
  • t

  • 1 large ripe avocado, pitted, peeled, sliced
  • t

  • Half a lemon
  • t

  • 2 vine-ripe tomatoes, seeded, sliced
  • t

  • Salt and freshly ground black pepper to taste
  • t

  • Handful of fresh arugula

Directions:

  • Slice baguettes in half lengthwise.
  • t

  • Spread bread with vegan mayonnaise
  • t

  • Sprinkle the bottom halves of bread with onion.
  • t

  • Squeeze lemon juice on avocado slices (to prevent browning).
  • t

  • Layer avocado and tomato slices on top of the onions. Season with salt and pepper.

  • Arrange arugula on top of sandwich filling. Top with remaining baguette halves.
  • t

  • Slice each sandwich in half at a diagonal and serve.

Cook’s note: If you’re packing a picnic basket, tightly wrap each sandwich half in plastic wrap and keep cool until ready to serve.
