Apricot Wheatgrass Sorbet

Serves 6

Ingredients:

  • 2 cups chopped, pitted fresh apricots
  • t

  • 3 ounces fresh wheatgrass juice
  • t

  • 1/3 cup agave nectar
  • t

  • 3 cups crushed ice

Directions:

    t

  1. Place all ingredients in a food processor or blender and pulse to chop.
  2. t

  3. Turn motor to high and continue to blend until smooth.
  4. t

  5. Serve immediately or store in the freezer in an airtight container. If frozen, let sorbet thaw slightly before serving.

Cook’s note: For a real treat, sprinkle with shredded toasted coconut before serving.
