Vegan Mango Oat Crisp

Ingredients:

  • 4 large, ripe mangoes, pitted, peeled, diced
  • t

  • 1 cup sugar, divided
  • t

  • 1 tablespoon finely grated lime zest
  • t

  • Juice of 1 lime
  • t

  • 1 cup white whole wheat flour
  • t

  • 1 cup rolled oats
  • t

  • 1 teaspoon Chinese 5-spice powder or cinnamon
  • t

  • 1/2 cup vegan margarine or coconut oil at room temperature
  • t

  • 3/4 cup sliced almonds

Directions:

  1. Preheat oven to 375 degrees F. and grease a 9-inch baking dish.

  3. In a large bowl, combine mango, 1/2 cup sugar, lime zest, and juice. Transfer to prepared baking dish.
  4. t

  5. In a medium bowl, whisk together flour, oats, remaining sugar, and 5-spice powder. Add margarine or coconut oil and rub it into the dry ingredients until it resembles coarse crumbs.

  7. Stir almonds into dry ingredients and sprinkle evenly over mango chunks.
  8. t

  9. Bake for 45 to 50 minutes or until topping is browned and mangoes are juicy and bubbling.

  11. Serve hot or at room temperature.
