Super Simple Pickled Onions

Ingredients:

  • 2 red onions, halved, thinly sliced
  • t

  • 1/2 cup apple cider vinegar
  • t

  • Pinch of salt
  • t

  • Pinch of sugar
  • t

  • Pinch of chile flakes
  • t

  • Pinch of dried thyme

Directions:

  1. Place onions in a large pot of boiling water. Blanch for 2 to 3 minutes or until tender.

  3. Meanwhile, whisk together remaining ingredients in a medium pot over medium heat. Bring to a simmer.
  4. t

  5. Drain onions in a colander and transfer to the medium pot, stirring ingredients to coat.
  6. t

  7. Add just enough water to cover onions, stirring again to combine.
  8. t

  9. Remove from heat and cool.
  10. t

  11. Store in the refrigerator in mason jars for up to 1 week.
