St Patrick’s Day Vegan Colcannon

Serves 4

Ingredients:

  • 2 potatoes, peeled, cut into chunks

  • 1 tablespoon olive oil
  • t

  • 2 cups coarsely chopped kale (stems removed)
  • t

  • 1/2 cup plain soymilk, warm
  • t

  • 2 tablespoons vegan margarine, melted
  • t

  • 2 green onions, chopped (green and white parts)
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. Place potatoes in a medium pot and cover with water. Bring water to a boil, reduce heat to medium low, and cook until potatoes are tender when pierced with a fork.

  3. Meanwhile, heat oil in a medium skillet over medium heat. Add kale and cook, stirring often, until wilted. Transfer kale to a large mixing bowl.

  5. Add potatoes, soymilk, and margarine to the bowl and mash together. Add green onions and season with salt and pepper. Mash again to combine. Serve hot.
