Savory Streusel-Topped Cauliflower

Serves 6

Ingredients:

  • 1-1/4 pound cauliflower florets
  • t

  • 2 tablespoons vegan margarine
  • t

  • 1/3 cup dried whole wheat bread crumbs
  • t

  • 2 tablespoons finely chopped fresh parsley
  • t

  • 3 tablespoons Parma Raw Parmesan Cheese Alternative
  • t

  • 1/4 teaspoon salt
  • t

  • Freshly ground black pepper to taste

Directions:

    t

  1. Preheat oven to 400 degrees F. and spray a 9-inch square baking dish with cooking spray.
  2. t

  3. Place cauliflower in a large pot of salted boiling water and cook for 3 minutes.
  4. t

  5. Drain into a colander and run water over florets to cool sightly.
  6. t

  7. In a small skillet over medium heat, melt vegan margarine, swirling to coat pan.
  8. t

  9. Add bread crumbs, parsley, Parma, salt and pepper. Cook, stirring constantly, for 1 minute. Remove from heat.
  10. t

  11. Transfer cauliflower to prepared baking dish and top with bread crumb mixture.
  12. t

  13. Bake for 15 minutes or until topping is crisp and cauliflower is tender. Serve warm.
