Ingredients:

  • 1 pound broccoli florets
  • t

  • 2 tablespoons olive oil
  • t

  • Salt and freshly ground black pepper to taste
  • t

  • 1 tablespoon finely grated orange zest
  • t

  • 2/3 cup dried currants

Directions:

  1. Preheat oven to 400 degrees F. and spray a baking sheet with cooking spray.
  2. t

  3. In a large bowl, combine broccoli and olive oil. Season with salt and pepper.
  4. t

  5. Spread broccoli on prepared baking sheet and roast for 15 to 20 minutes, or until tender and lightly browned.
  6. t

  7. Transfer broccoli to a serving bowl and toss with orange zest and currants. Add a little more olive oil if desired.
  8. t

  9. Serve warm.
