Basil Brazil Nut Pesto

Ingredients:

  • 1/2 cup chopped fresh basil leaves

  • 1/4 cup chopped Brazil nuts

  • 2 garlic cloves, chopped

  • 1 tablespoon lemon zest

  • Juice of 1 lemon

  • 5 to 6 tablespoons extra virgin olive oil

  • Salt and freshly ground black pepper to taste

  • Crumbled vegan cheese to taste (optional)
