Dark Chocolate Banana Vegan Ice Cream

Serves 6

Ingredients:

  • 4 ripe bananas, peeled, sliced
  • t

  • 1/4 cup chopped vegan dark chocolate
  • t

  • 1/4 cup shredded sweetened coconut
  • t

  • 1/4 cup chopped toasted walnuts
  • t

  • 1/4 cup coconut or vanilla soy milk

Directions:

    t

  1. Place bananas in a gallon-size freezer bag, seal, and place in the freezer until very firm, about 2 hours.
  2. t

  3. Transfer frozen bananas to food processor and pulse until pureed.
  4. t

  5. Transfer banana puree to a large bowl and stir in dark chocolate, coconut, walnuts, and coconut or soy milk until well combined.
  6. t

  7. Spoon ice cream into a freezer-safe container and seal.
  8. t

  9. Freeze until just firm to enjoy immediately or freeze for up to 1 month and let soften slightly at room temperature before serving.
