Tempeh Tacos

Makes 8 tacos

Ingredients:

    t

  • 1 tablespoon olive oil
  • t

  • 8 ounces tempeh, crumbled
  • t

  • 1/3 cup finely chopped red bell pepper
  • t

  • 1/2 cup water
  • t

  • Taco seasoning to taste
  • t

  • 1 cup canned black beans, rinsed, drained
  • t

  • 1 cup fire-roasted diced tomatoes, drained
  • t

  • 8 (6-inch) whole wheat or corn tortillas, warmed
  • t

  • 4 green onions, chopped (white and green parts)
  • t

  • 1 cup shredded lettuce
  • t

  • 4 ounces shredded vegan cheese

Directions:

    t

  1. Heat olive oil in a skillet over medium heat. Add tempeh and pepper and cook, stirring, for about 6 minutes.
  2. t

  3. Add the taco seasoning, water, beans, and tomatoes and cook, stirring occasionally, until most of the liquid has evaporated.
  4. t

  5. Serve tempeh mixure in the tortillas with the onions, lettuce, and cheese.
