Vegan Grilled Cheese and Sun-Dried Tomato Sandwich

Makes 1

Ingredients:

  • 2 slices whole wheat or whole grain bread
  • t

  • 1 tablespoon vegan margarine
  • t

  • 1 slice vegan cheese
  • t

  • 3 tablespoons chopped sun-dried tomatoes packed in olive oil

Directions:

  1. Spread margarine on one side of each piece of bread.
  2. t

  3. Spray a nonstick skillet with cooking spray and place it over medium heat.
  4. t

  5. When skillet is hot, place one slice of bread, margarine side down, in skillet.
  6. t

  7. Top with cheese and sun-dried tomatoes. Cover with remaining slice of bread, margarine side up.

  9. Lightly press sandwich with the back of a spatula (spray spatula with cooking spray to keep it from sticking to the bread).

  11. Cover skillet and cook for 2 minutes or until bottom is lightly toasted.
  12. t

  13. Flip sandwich, cover skillet, and cook an additional 2 minutes or until cheese is melted and both sides of sandwich are lightly browned.

  15. Transfer to a plate and cut in half to serve.
