Mini Buffalo onion rings with spicy cilantro dipping sauce

Super Bowl parties are as much about the food as the football game. Mini Buffalo onion rings and a red-hot dipping sauce will spice up your game day spread.

Onion rings are a staple on any Super Bowl party menu, but we’ve changed things up by using boiler onions and coating them in a spicy Buffalo beer batter. These mini onion rings are perfectly light and crispy and are just begging to be dipped in spicy cilantro sauce.

Serves 4-6


For the onion rings:

  • 3/4 cup flour
  • 3/4 cup beer (we used a light lager)
  • 1 tablespoon Frank’s Red Hot Original Cayenne Pepper Sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound boiler onions
  • Vegetable oil

For the dipping sauce:

  • 1/4 cup plus 2 tablespoons sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons Frank’s Red Hot Original Cayenne Pepper Sauce (or more to taste)
  • 2 teaspoons lime juice
  • 1/2 teaspoon cumin
  • 1 tablespoon cilantro
  • 1/4 -1/2 teaspoon salt


For the onion rings:

  1. Prepare onions by trimming both ends and peeling. Cut through the middle to make two sets of rings, separating each ring.
  2. Whisk flour, beer, hot sauce, salt and pepper in a medium bowl until smooth. Mixture will be thick.
  3. Fill a large pot with several inches of vegetable oil and heat oil over medium-high heat to about 350 degrees F.
  4. Working in batches, dip onion rings in batter to coat completely. Allow excess batter to drip off, then place in oil. Fry until golden brown and crisp, flipping as needed. Remove from oil and drain on paper towels.
  5. Serve immediately with dipping sauce.

For the dipping sauce:

  1. Whisk all ingredients together in a small bowl. Refrigerate until ready to serve.
