What you’ll need
- 8 ounce block of mozzarella
- 16 (4-inch) Genoa salami slices (or other salami of your choice)
- 1 (14 ounce) can of artichoke hearts, drained and halved
- 1 pint of grape tomatoes
- 1 (6 ounce) jar of pitted olives, drained.
- 16 (6-inch) wooden skewers
- One bottle of balsamic-basil vinaigrette
- 1 tablespoon fresh lemon juice
- A paring knife or chef’s knife
- Cutting board
- Baking dish
Making the skewers
Gather all your ingredients together before getting started. Give yourself plenty of space for cutting and assembling the skewers. Be sure to wash your hands thoroughly before you start, as you’ll be handling ready-to-eat food.
Step 1: Cube and wrap
Using a sharp knife, cut the mozzarella into even cubes. About 1 inch by 1 inch should do nicely. Wrap a slice of your favorite salami around each of the mozzarella cubes.
Step 2: Assemble the skewers
Next, assemble your skewers, alternating the cubes of cheese/salami, artichoke hearts, olives and tomatoes. Place the completed skewers in a baking dish of your desired size.
Step 3: Add the vinaigrette
Mix together the lemon juice and balsamic-basil vinaigrette and pour the mixture over the skewers. Use a spoon to avoid any unnecessary mess or spills!
Step 4: Cover and chill
Cover the baking dish with a paper towel and place it in the fridge to chill for about eight hours. This allows plenty of time for the marinade to add lots of great flavor.
Step 5: Serve and enjoy!
Once chilled, remove the skewers from the marinade and plate individually or on a platter. Serve your guests and eat up!
