Cranberry sauce may make a delicious side to go with turkey on Thanksgiving, but pour it over chicken in your slow cooker and you have an amazing dinner any night of the week.
These days you’re probably seeing a lot of cranberry recipes for sauces, pies or muffins. And they’re all in preparation for the big holiday next week. But if you’re craving cranberries now, why not grab a can of sauce (or whip up your own) and pour it over some chicken for a nice intimate dinner before the big family affair next week. It only takes three ingredients and a slow cooker to have a delicious autumn-inspired dinner today, next week or even next month.
- 1 pound chicken thighs
- 1 (16 ounce) cranberry sauce
- 3 tablespoons dry onion soup mix
- Place chicken thighs in a 4-5 quart slow cooker.
- In a small bowl, stir together the cranberry sauce and soup mix. Pour the cranberry mixture over the chicken in the slow cooker. Cover and cook on high for 2-1/2 to 3 hours. Serve chicken and sauce with rice or your favorite salad.
