There’s nothing like a big bowl of ice cream after you’ve just had your heart broken. Whether your relationship lasted two years like Zooey Deschanel’s or a mere 72 days like Kim Kardashian’s, breakups are never easy. Sadly, we all can’t hire fancy lawyers or an entire press team to clean up the aftermath of our divorces, breakups and fights, so indulging in comfort food is the next best thing.
They say time heals all wounds, but I think the same goes for food. There is nothing a cheesy slice of fresh pizza, decadent forkful of hearty pasta or sweet spoonful of ice cream can’t solve, especially when it comes to a broken heart. Homemade pizza is one comfort food that is as easy as it is delicious. After a few slices, you’ll forget whatever-his-name-was who broke your heart. Plus, what’s better with a glass (or bottle) of wine than pizza?
Makes 1 (10-inch) pizza
- 1 (10-inch) whole wheat pizza crust, like Boboli
- 1/2 cup marinara or pizza sauce
- 1 medium tomato, sliced
- 1 tablespoon extra virgin olive oil
- 1/2 pound fresh mozzarella, sliced
- 6-8 fresh basil leaves
- Salt and pepper
- Cooking spray
- Preheat oven to 500 degrees F. Grease a pizza sheet with cooking spray.
- Place crust on the pizza sheet and cover pizza crust with olive oil. Pour tomato sauce over olive oil. Place tomatoes, mozzarella and basil leaves on the crust. Sprinkle with additional salt and pepper.
- Bake for eight minutes or until cheese is bubbly.
Low fat chicken tetrazzini
Makes 6 (1 cup) servings
Nothing beats the post breakup blues like a cheesy, hearty forkful of creamy pasta. Plus, with less calories and fat than normal tetrazzini, you will still have that rockin’ body to taunt your ex with (isn’t that the best revenge in a breakup, anyway?)
