Tonight’s Dinner: Apricot Chicken

There is something so satisfyingly simple about using canned jam to flavor chicken. This recipe makes use of Apricot Jam and the results are delicious. A perfect weeknight meal for your family, while still be elegant enough for guests.

Apricot Chicken

Apricot Chicken

  • 3 tablespoons butter
  • 1 onion, diced
  • 1 pound of chicken cutlets
  • 1 1/2 cup chicken broth
  • 1 cup apricot jam
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cardamon
  • Dash of Tabasco sauce

In a large saucepan, heat the butter over medium-high heat. Add chicken and onion and cook until chicken is cooked throughout, about 5 minutes. Stir in remaining ingredients. Simmer over medium heat until the sauce has thickened. Salt and pepper to taste before serving over steamed white rice.
