Autumn Harvest Zucchini Quiche
- 1 prepared pie crust
- 5 eggs
- 1/2 cup milk or cream
- 1/3 cup flour
- 1 cup asagio or swiss cheese, grated
- 1 small zucchini or yellow squash, sliced thin
Press the pie crust into a tart pan, or large pie tin. In a large bowl, beat together eggs, milk, and flour until well combined. Fold in grated cheese. Pour mixture into pie crust. Arrange sliced zucchini atop. Bake in an oven preheated to 400 degrees for 35-40 minutes, or until the center of the quiche has set (if baking in a tart pan, the quiche will only need 30-35 minutes). Allow to cool before serving.
