How to separate an egg

Whether you're cracking them for breakfast or separating the white from the yolk for a recipe, there is a definite technique when it comes to eggs. Here are a few simple steps for how to separate an egg yolk from the whites.

First, tap the egg on the side of a bowl a few times while rotating it to create a crack line around the middle of the egg.

Step 2: Open the shell

Hold the egg over a bowl and gently pull apart the two halves that you created. You may need to gently press the shell at the crack with your thumbs to divide the two segments. Be sure to hold the two halves upright so you don't lose the contents of either half until you are ready.

Step 3: Leak out the whites

While still holding the shell halves over the bowl, transfer the yolk back and forth between the two halves while allowing the whites to leak out into the bowl below.

Step 4: Separate the yolk

Once nearly all the whites have been transferred into the bowl, transfer the yolk into a second bowl.
