Roti Bread

Makes 12 servings

2 cups durum wheat flour
1/2 teaspoon salt
3/4 cup water
1 tablespoon vegetable oil

1. Combine all ingredients in a large bowl until dough pulls away from the bowl. Flip dough onto a lightly-floured surface and knead until it is smooth, about 10 minutes.

2. Preheat a large skillet over medium heat. Separate dough into 12 equal balls. Cover with a damp cloth and flatten with the palm of your hand. Using a rolling pin, continue to flatten dough into thin equally-sized circles.

3. Cook bread on skillet for 1 minute, then flip over and cook for an additional 1 minute. Serve warm with garlic chutney (recipe below).

Garlic Chutney

Makes 12 servings

6 medium-sized cloves of garlic, peeled
6 green chilies, minced
6 cups plain yogurt
Salt to taste

Combine garlic and chilies to make a paste. Mix together with yogurt and sprinkle with salt. Store extra chutney in an airtight container in the refrigerator.
