Honey Bunches Banana Bread

A tender bread with a delicate crunchy surprise. This recipe uses Honey Bunches of Oats with Real Bananas but you can substitute simple bran flakes or another dry cereal.

1 cup flour
1/2 cup whole wheat flour
1/2 cup brown sugar
2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
1 1/2 cups mashed ripe bananas
1/2 cup buttermilk
1 1/2 cups Honey Bunches of Oats with Real Bananas cereal
1 cup chopped walnuts

Preheat oven to 350 degrees F. and generously spray a 9x5-inch loaf pan with nonstick cooking spray. Mix flour, sugar, baking powder, baking soda and salt in large bowl and set aside. In a medium-sized bowl, beat eggs, bananas, and buttermilk and mix well. Add to flour mixture and stir just until moistened. Batter will be lumpy. Stir in cereal and walnuts. Pour into greased 9x5-inch loaf pan. Bake 55 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack. Invert and cut into slices to serve.
