Passover Mushroom Pilaf

Serves 6
3T Smart Balance margarine
1 large onion, diced
1 cup sliced button mushrooms
1 cup sliced Shitake mushrooms
1 cup sliced (small) portabello mushrooms
2 tsp salt
1/8 tsp pepper
2 cups matzah farfel
2 large eggs, beaten
1/2 cup chicken broth (or parve)
1/3 cup fresh parsley 

1. Heat margarine in saucepan, and add onions. Stir until transparent. Add all mushrooms, salt and pepper. Saute until tender. Transfer mushrooms to another bowl and set aside. Heat farfel in same pan over medium heat.

2. Quickly stir in eggs, mixing constantly to coat and separate pieces. Add mushrooms and mix well. Gradually add broth and stir in parsley.
