Pumpkin Dump Cake

Here’s an easy, yummy and fun recipe for budding cooks who would like to contribute to the holiday feast.

1-29 oz. can pumpkin
1 can evaporated milk
3 eggs
1 cup sugar
3 teaspoons ground cinnamon
1 teaspoon salt
1 box yellow cake mix

Mix all this up (kids can do this by hand) and pour into a greased 9×13 pan.

Sprinkle one yellow cake mix over the top of the batter, up to 1 cup = chopped pecans and then drizzle 3/4 melted butter (or margerine) over the = top of cake mix and nuts. Bake at 350F for 50 minutes. It may still be a little “jiggly” in the center when you remove it from the oven, but it firms up as it cools. Serve with whipped cream or vanilla or cinnamon! yum) ice cream. This is really best if you bake it a day or two ahead of time.
