Eggs Foo Young

An excellent dish for utilizing leftover chicken or seafood!

5 large eggs
1/2 cup water
1 teaspoon unsalted butter
1/4 cup minced onions
1/2 cup thinly sliced celery
1/2 cup chopped cooked meat (chicken, lobster, shrimp, etc.)
1/4 cup sliced water chestnuts

1. Salt, pepper, soy sauce to taste, if desired.

2. Beat eggs with water while preheating a large saut� pan over medium heat.

3. Add butter to pan and add remaining ingredients to eggs. Fry 1/4 of the batter at a time, like pancakes in prepared pan, turning once. Serve with salt, pepper and soy sauce to taste, if desired.

Makes 2 (1 1/4-cup) servings.
