Eggs Benedict Over Tomatoes
Simply substituting a thick slice of tomato for the English muffin makes this classically delicious dish low-carb-legal.
Eggs Benedict over Tomatoes
Makes 4 (1-egg) servings.
4 slices Canadian bacon, fried until crisp
4 large eggs, poached
4 thick slices of tomato
4 tablespoons prepared Hollandaise sauce
Arrange Canadian bacon on top of tomato slices. Cover each with a poached egg, and drizzle Hollandaise sauce over all.
