A quick and easy chowder full of flavor – serve this spicy dish for Mardi Gras or any other time of the year when you’re feeling festive.
Creole Bacon Chowder
3 slices bacon, chopped
3 tablespoons chopped green pepper
2 tablespoons chopped onion
2 tablespoons whole wheat flour
2 cups diced canned tomatoes (with juices)
2 cups beef stock
1 cup water
1/2 teaspoon cayenne pepper
1/2 teaspoon celery salt
1 tablespoon prepared horseradish
Bacon bits, sour cream for garnish, if desired
Cook bacon pieces over medium heat until crisp. Remove with a slotted spoon and set aside. Add remaining ingredients all at once and continue to cook and stir until mixture thickens and simmers. Garnish with prepared bacon bits and dollops of sour cream, if desired.
