A simple and satisfying dish, peppers and olives become a uniquely Greek heart-healthy meal.
Greek Peppers with Olives
2 tablespoons olive oil
2 red bell peppers, roasted, sliced into strips
2 green bell peppers, roasted, sliced into strips
1 cup Greek olives, drained, pitted
1/2 cup large black olives, drained, pitted
3 cloves garlic, minced
8 anchovy fillets in oil, drained, finely minced
1/4 cup crumbled feta cheese
1. Heat oil over medium-high heat and saute pepper strips for two minutes.
2. Add olives, garlic, and anchovies and continue to cook and stir until heated through.
3. Garnish with feta when serving.
