I would still like to include some vegetables in my low-carb diet. Which have the lowest carbs?

Green ones! I call them high-water, high-fiber plant foods: broccoli, greens (lettuce, spinach, etc.) green beans, eggplant, okra and the like.
Starchy foods, including starchy veggies (corn, potatoes, peas) have about four times the calories of green foods. For example: 1 cup of spinach (180g) = 8g carb, ~4g fiber
3″ potato (180g) = 37g carb, ~4g fiber
