Jamie Oliver Just Shared His Favorite Way To Use Up Tomatoes Before They Go Bad & We’re Trying It ASAP

If you’ve read up on food waste, then you know that Americans throw away almost half of the food we buy. There are viral TikTok hacks that can help you try not to waste food, and those that help you save money by reducing food waste. But sometimes, in spite of our best efforts, we’re still left with a container of wrinkled cherry tomatoes at the end of the week. They might not be fresh enough to eat in a salad, so what’s a cook to do? Jamie Oliver has the answer.

Oliver isn’t just a cookbook author (his one-dish meal cookbook One is available for pre-order) and television star. He’s also a long-time proponent of more sustainable eating, and he recently took to Instagram to share his strategy for saving tomatoes that are past their prime from going in the bin…er, garbage.

“Tomatoes simply roasted with olive oil, garlic, fresh herbs, seasoning,” Oliver said. “I like to add a dash of red wine vinegar too.” The extra acidity from a good red wine vinegar
can actually highlight the sweetness of the tomatoes, and can bump up the flavor of tomatoes that are past their prime.

Roasting tomatoes (either whole or halved cherry tomatoes, or large chopped or halved tomatoes) at a low and slow heat helps to concentrate their sweet flavor. Once they’re roasted, you can use them in a million ways. According to Oliver, they’re “a great base for soups, pastas, risottos, pizzas and more,” and once cooked, they can even be frozen to use at a later date.

We can think of dozens of ways to use the tomatoes. From blender salsa to a roasted tomato bruschetta, as a warm topping for grilled or roasted chicken, or simply tossed with pasta and cheese, you’ll never end up throwing away a wrinkled container of cherry tomatoes ever again.
