Leave It to Ina Garten to Make Avocado Toast Even Better

Even Ina Garten finds it hard to cook sometimes. The Barefoot Contessa has been posting ever-so-relatable recipes and messages on Instagram lately, from acknowledging pandemic anxiety while sharing pantry recipes to giving us a much-needed laugh with her gigantic quarantine cocktail.

Now, she’s sharing her recipe for that Millennial favorite, avocado toast, with the amped-up-but-still easy twist of topping it with a soft-boiled egg — and pairing it with a comforting message: “Today in his wonderful @nytimes newsletter, @samsifton wrote, “There are days these days when it seems heroic just to fry an egg and eat it on toast.” Boy, can I relate to that (and I love to cook)!! Fortunately, for breakfast, lunch, or dinner I always have an Avocado Toast up my sleeve. The toast, of course, sounds delicious, but frankly, we’re finding Sifton’s words — and Garten’s confession that they hit home for her, too — equally comforting right now.
