Chicken Tortellini

An easy and elegant recipe that is a surefire compliment getter, this chicken tortellini is impressive and fast-to-fix.

Chicken Tortellini

Serves 4 to 6

1 tablespoon of olive oil
4 chicken breasts (marinated in Italian salad dressing), diced
1 bag of frozen tortellini (any flavor)
1 red bell pepper, cored, halved and sliced
1 green bell pepper, cored, halved and sliced 
1 yellow bell pepper, cored, halved and sliced
Minced garlic to taste
Italian seasonings
Extra Italian dressing
Freshly grated Parmesan cheese

1. Start a stockpot of salted water on the stove to bring to a boil. Heat olive oil in a large saute or frying pan. Brown chicken in oil until cooked through then remove with a slotted spoon. Add tortellini to boiling water and cook according to package directions. Drain in a colander.

2. Add bell pepper, garlic, Italian seasoning and 1/3 cup Italian dressing to saute or frying pan and cook, stirring, until peppers are tender. Add chicken to heat through. Combine mixture with chicken and serve topped with Parmesan cheese.
