One-Pot Wonder: Thai chicken and veggie noodles for an easy takeout fake-out

What a great way to get your veggies in, all mixed together with chicken, noodles and delicious homemade sauces for a complete one-pot meal perfect for a weeknight.

There's so much tastiness going on in this dish. A little spicy, a lot of crunch, a bit of sweet, limey citrus, pops of cilantro, and I haven't even gotten to the main items yet.

Along with the tender chicken, lightly cooked veggies and angel hair pasta come two types of sauce. But don't worry... it's still a quick meal to put together, ready in just 35 minutes.

One is a garlicky lime Thai sauce that the chicken, veggies and pasta are cooked in.

And then just before serving, an easy homemade peanut sauce is drizzled on top.

One-pot Thai chicken and veggie noodles recipe

Serves 2

Prep time: 15 minutes | Cook time: 20 minutes | Total time: 35 minutes


For the Thai sauce

  • 3 limes, juiced
  • 3 garlic cloves, minced
  • 3 teaspoons fish sauce
  • 2 tablespoons sugar
  • 2 whole dried Thai red chili peppers, cut into thin slices (add less or more, to taste)
  • 3 teaspoons chopped cilantro

For the peanut sauce

  • 4 tablespoons creamy peanut butter
  • 3 tablespoons rice vinegar
  • 3 teaspoons sugar
  • 2 tablespoons hoisin sauce
  • 3 teaspoons soy sauce
  • 3 tablespoons water

For the chicken and veggie noodles

  • 2 boneless, skinless chicken breasts, cut into small pieces
  • 2 tablespoons canola oil, divided
  • 1/2 onion, peeled and cut into slices (about 1/2-inch thick)
  • 1 cup sliced carrots
  • 1 cup green beans, cut in half widthwise
  • 1 cup Chinese pea pods
  • 2 servings cooked (al dente) angel hair pasta
  • 1/3 cup coarsely chopped cilantro
  • 1/4 cup coarsely chopped peanuts
  • 2 lime quarters, for serving


For the Thai sauce

  1. To a medium-size bowl, add all the ingredients, and whisk together. Set aside.

For the peanut sauce

  1. To a small bowl, add all the ingredients, and whisk together. Set aside.

For the chicken and veggie noodles

  1. Heat a wok or large skillet on medium heat.
  2. Add 1 tablespoon of canola oil and the chicken. Stir as the chicken cooks.
  3. Add 2 tablespoons of Thai sauce, and continue stirring. When the chicken is thoroughly cooked, transfer it to a plate.
  4. Heat the same wok or large skillet on medium heat, and add the remaining canola oil.
  5. Add the carrots and green beans, and continuously stir.
  6. Add the onion and 2 tablespoons of Thai sauce. Continue to stir.
  7. When the carrots start to get a brown edge to them and the onions start to turn translucent, add the pea pods, noodles, cooked chicken and the remaining Thai sauce. Stir in the cilantro.
  8. Transfer to serving dishes, and top with peanuts. Serve while hot, and drizzle peanut sauce on top. Garnish with lime wedges.
