Chocolate ganache cheesecakes are perfectly bite-sized

Creamy cheesecake on a chocolate crust, dotted with flavored chips, smothered in chocolate ganache, and topped with a HERSHEY’S KISSES Milk Chocolate!

One of my absolute favorite parts of the holiday season is the food. So many of my holiday traditions and memories involve food. From cookie exchanges, to warm hot cocoa after sledding, the food in the holidays can make or break the fun. And what could be better for a fun and tasty holiday party than chocolate ganache covered cheesecake bites?

Truth be told, I am not much of a baker. I come from a family with a long standing tradition of holiday baking, and I have always felt a little inadequate in my own skills. I can bake a mean cake roll, but I use a mix. Eeek, I am airing my dirty laundry, here. But one thing I have always been good at baking, probably because I love EATING it so much, is cheesecake!

Don’t let the long ingredient list fool you, these cheesecake bites could not be easier. This is not a finicky cheesecake. And it is so easy make.

Plus it has ganache! I mean, is there anything in this world that cannot be improved upon with chocolate? Creamy, silky, glorious chocolate ganache! I contest not.

When I make these, I keep everything neat and tidy by placing the bites on a cooling rack with a piece of parchment underneath. Then when I drizzle the ganache over the top, all the excess drips onto the parchment, and I can just throw it away. After I lick it off…of course!

And then to add a touch of fun, great flavor, and a classic treat, by putting a HERSHEY’S KISSES Milk Chocolate on top! Aren’t these the cutest? You could go one step further and attach a star shaped sprinkle on top with some chocolate, so it looks like a little tree. Either way, these are going to be favorites!

The chips on the inside add little pops of flavor. You can add REESE’S Peanut Butter Chips for a fun peanut butter flavor. Or Hershey’s Cinnamon Chips, which will be very holiday-esque. One of the beauties of cheesecake is that it is creamy and delicious, and goes well with pretty much any flavor. So you can customize it to your personal preference.

Chocolate Ganache Covered Cheesecake Bites

  • 2 cups graham cracker crumbs (Approximately one sealed package of crackers)
  • ¼ cup melted butter
  • 2 tbsp. HERSHEY’S Cocoa
  • 2 tbsp. granulated sugar
  • Cheesecake
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 tbsp. all-purpose flour
  • 1 tsp vanilla
  • 4 large eggs
  • 1 cup HERSHEY’S Semi-Sweet Chocolate Chips
  • 1 cup REESE’S Peanut Butter Chips or HERSHEY’S Cinnamon Chips


  • ¾ cup HERSHEY’S Semi-Sweet Chocolate Chips
  • ¾ cup HERSHEY’S Milk Chocolate Chips
  • ¾ cup heavy cream
  • 2 tablespoons butter




  1. Preheat oven to 325 degrees F.
  2. Put crackers, butter, HERSHEY’S Cocoa and sugar in a food processor and process until combined and crumbly. Should have a sandy texture.
  3. Line a 9x13 pan with foil, and press cracker mixture into it, evenly distributing it across the bottom
  4. Bake for 10 minutes

Cheesecake Filling

  1. In a stand mixer bowl, or using a hand mixer, cream cheese and sugar together, add in flour and vanilla.
  2. Beat in the 4 eggs, but do not overmix. 3. Fold in chips, ½ HERSHEY’S Semi-Sweet Chocolate Chips, and ½ REESE’S Peanut Butter Chips.
  3. Pour over crust.
  4. Bake at 325 degrees for 45 minutes or until center is set.
  5. Cool on the counter for 1 hour
  6. Refrigerate for 3-4 hours.
  7. Get a big knife, run hot water over it (this will help it cut smooth)
  8. Cut cheesecake into one inch squares.

Chocolate Ganache

  1. In a microwave safe bowl heat cream and butter for about 1 minute 30 seconds
  2. Stir in both types of chocolate chips, and keep stirring.
  3. If the chocolate chips do not melt entirely, heat in 30 second intervals, and stir between until melted, this should really only need to be done once, maybe twice.


  1. Put parchment paper down, cover with a cooling rack
  2. Put cheesecake square on top of the cooling rack, and spoon chocolate ganache over the top. 3. Open a HERSHEY’S KISSES Milk Chocolate and press it into the top.
