Sure, grilled chicken is great, but it can get boring — and quick. Use this recipe to jazz up that grilled chicken and make it more awesome and flavorful than ever with fresh tropical flavors.
I used organic chicken breasts that I marinated for several hours (overnight would be even better) in a mixture of fresh lime juice, honey and lots of garlic cloves. This chicken stays juicy and tender when grilled and then gets served with a zesty mango-cucumber salsa on top.
Light and fresh, this chicken is the perfect recipe for summer gatherings, dinner, lunch or leftovers. Use this grilled chicken and salsa on top of a fresh green salad or even in a quick wrap, and pack it for lunch.
Garlic-lime grilled chicken with mango-cucumber salsa recipe
Juicy garlic-and-lime-marinated chicken is grilled and topped with a flavorful tropical salsa made with mango and cucumber.

Ingredients:
For the garlic-lime chicken
- 4 all-natural or organic chicken breasts
- 2 limes, juiced
- 2 tablespoons raw honey
- 1/4 cup extra-virgin olive oil
- 1 teaspoon onion powder
- 4 garlic cloves, minced
- 1 small shallot, minced
- Salt and pepper, to taste
For the mango-cucumber salsa
- 1 large mango, minced or finely diced
- 1 large English cucumber, diced
- 1/2 small red onion, minced
- 1 red bell pepper, finely chopped
- Fresh cilantro, finely chopped
- 1 small jalapeño, minced
- 1 large lime, juiced
- 1 tablespoon agave
- Salt and pepper, to taste
Directions:
- To a large, gallon-size, zip-top bag, add the chicken breasts.
- In a bowl, combine all the ingredients for the marinade, and mix well. Pour the marinade on top of the chicken, and seal the bag.
- Shake the chicken to coat it, and refrigerate for 2 hours or overnight.
- Before grilling the chicken, in a mixing bowl, combine all the ingredients for the mango-cucumber salsa. Mix well, and cover with plastic wrap. Chill for 30 minutes before serving to allow the flavor to develop.
- When ready to prepare the chicken, heat a large cast-iron or other grill pan over medium-high heat.
- Lay each chicken breast in the pan, and grill for 6 to 7 minutes per side or until the centers of the chicken are no longer pink and the juices run clear.
- Toss the salsa well, then spoon it on top of the grilled chicken, and serve.
