Ice cream sandwich cake is a shockingly easy dessert

There are days when baking a cake from scratch just feels like an impossibility.

Whether you have last-minute guests, got in over your head with the prep for a dinner party (or let's be honest, dinner for two on a Wednesday) or find yourself with a hankering for something sweet at 11 p.m., then this is the cake for you!

The cake, introduced by Reddit user Isai76, is really simple. All you need are ice cream sandwiches, caramel and chocolate sauce and whipped topping.

Stack the ice cream sandwiches, alternating their direction. Between each layer, drizzle some of the caramel and chocolate sauces, then coat the entire cake in whipped topping and drizzle the sauces over the top. Voilà!

My favorite thing about this cake is that you can modify it in simple ways to please any palate.

Try layering the sandwiches with fresh, macerated strawberries and then topping it with fresh whipped cream for a springy dessert. Or you could add a layer of Peppermint Patties between each layer of sandwiches and add a drop of peppermint extract to your whipped topping for a refreshing, minty dessert.

The options are endless, and it couldn't be easier to pull together.
