In the dead of winter, when you’re craving anything and everything that isn’t a root vegetable, roasted cherry tomatoes will be your savior.


Now that you can buy decent tomatoes year-round at most grocery stores, you can get a little taste of summer whenever the dreary winter days are getting you down. It only takes a low and slow roast, and your tomatoes will literally burst with flavor.

Grab some toast, add a schmear of ricotta (it actually looks more like a giant scoop of ricotta, which is fine by me), and top with sweet, juicy, roasted cherry tomatoes. It’s super-simple, super-tasty and makes an impressive appetizer for impromptu guests. Nobody will ever know it took just minutes of prep time.
